Organic Acids Quantification in Cranberry Juice

Cranberry juice, while rich in nutrients and antioxidant content, does contain high amounts of organic acids that can restrict consumers' intake. This is unfortunate because research has shown that its natural properties can prevent oral diseases among other things.

Grenier's team conducted a study to determine whether cranberry juice conserved its antibacterial, anti-inflammatory and anti-adherence properties after deacidification, which would allow people to consume the beverage while avoiding gastrointestinal discomfort. The sample was prepared with SiliaPrep C18 Cartridges in order to quantify organic acids in the juice.
